TERROIR/CLIMATE/SOIL

The property is located at the western end of the Dordogne, Gironde separated by a small stream called the Seignal.

It culminates in one of the highest points of the department, 12 km from Saint Foy la Grande, 30 km from Saint-Emilion and 15 km from Bergerac.

Exposed east-west on a ridge of clay and limestone, 130 meters above sea level, the vineyard is planted to red 70% Merlot, 25% Cabernet Sauvignon and 5% Cabernet Franc and whites of 45% de Semillon, 45% Sauvignon Blanc and Gris and 10% Muscadelle.

Densities range from 3500 feet to 5500 feet per ha. The manual stripping and green harvesting are performed annually. All the little ways is carried on manually without mechanization or addition of any chemicals whatsoever.

Yields are very low to ensure optimal concentration and maturation, and going from 30 to 50 hl / ha and only 10-12 hl / ha for Saussignac sweet.


VITICULTURE/WINEMAKING

Property Specifications of organic farming is respected and commitment to Ecocert was signed in 2004. The 2007 vintage is certified AB.

A restructuring of the vineyard began in 2003, with plantings of high density (5500 feet / ha) and a selection of quality vines, Selected for their adaptation to soil and climate. These plantations were performed taking care to have a maximum leaf area.

The winery was completely restored in early 2002. The building was isolated taking advantage of the redesign of the roof. It features temperature-controlled stainless steel tanks of small capacity, new oak casks of 50 hl oak barrels and French.

Aged in oak barrels for 6 to 8 months.


TASTING NOTES 

Color pale yellow with shades of green hues. The nose is intense, highly complex, fruity notes of lemongrass, passion fruit slightly muscat, and floral notes of acacia flowers white. The mouth is round and delicious, with the impression of biting into the fruit, ending with a lingering finish and flattering.

Perfect aperitif to enjoy with your favorite cheese.  Pair with Tuna Tartare, Paella or Veal Piccata.
