Les Hauts de Riquets guiding principles are respect for the fruit and the land which dictated the move towards organic culture in 2005. The grapes grown for the red wines are Cabernet Franc, Merlot and Malbec. The first being best for fineness and aroma.
All the grapes are hand picked then fermented in oak barrels, and regular tasting by the Oenologue is an essential part of the process. The vineyard work is governed by respect for the grapes, the absence of chemicals, and the absolute need for a high-quality product.
This cuvée from old vines characterized the expression of a calcareous soil Harvest are performed manually, by hand. All selected grapes are pressed then steeped in the juice for as long as possible to give a strong color.
Fermentation : In either new, or used-only-once-or-twice, barrels – the wine is kept on the lees for 8 months then carefully siphoned off. No filtration nor settling agents are used
The assembly defines itself on the fruity character and silky wine.
Full-bodied on the tongue with plenty of softness. After-taste of sweetness and red fruit. The first taste is particularly soft, the fruit not over-powering. The after-taste has plenty of suppleness and a good structure without suffering from excessive oak flavors. Fairly long on the tongue – overall a good clarity and balance.
A perfect pairing to Grilled Pork Tenderloin, Lamb Shank and Jamaican Jerk Chicken.
